Hi everyone, A Comforting Vrat Meal, Ready in About 30 MinutesPlanning a filling meal for Sawan, Navratri, Ekadashi, or another fasting day? This easy vrat thali pairs soft rajgira paneer paratha with flavorful sweet potato sabzi and fresh curd. The meal is made without white potatoes and uses naturally gluten-free ingredients. What's on the Plate
The paratha mixture combines grated paneer, amaranth flour, roasted peanut powder, green chili, cumin, coriander, and vrat-friendly salt. Since it doesn't contain potato, the dough needs water added gradually until it becomes soft and easy to shape. Learn
Serve the hot paratha and sabzi with fresh curd. You can make about five parathas from the recipe, and boiling the sweet potatoes ahead of time makes the meal even quicker.
